Many Ubisoft games for example use AVX now (although they occasionally have this requirement removed, sometimes patched out, sometimes patch IN - so never assume with Ubisoft). I believe Denuvo anti-tamper uses AVX in more recent versions as well, so there's another bunch of games.
Since it's such a technical thing, it's almost never stated outright, and publisher will hide behind the system specs saying you need an FX chip or better.
So you'll find most information by looking up if people are having problems starting the game on Phenom processors.
Unfortunately Phenom is 10 years old now so an increasing number of games are highlighting it's lack of AVX support.

My CPU is a Intel Core i7 Extreme 980X and boi, with a RFX 2070S everything I play still runs smooth at 60FPS on this 11y old machine.
PPL berate you your CPU is too old yada yada and more games are using it etc. but I actually rarely encounter games that truly have them. CP2077 was one of them, it was patched out. I bought Assassin's Creed: Odyssey a year after it came out and didn't even realize the AVX issues, as they've been patched out. I play Forza Horizon 5 on Full HD with 60 FPS, no issues.
Whatever AVX can really improve in terms of performance, it can't be that important otherwise every game would have it.
Anyway, the steam shop store of Death Stranding explicitly mentions this. Though I'm not sure all games do? Samurai Shodown does not on their store page. Seems to be a dev courtesy to even mention this.
(My I7 960 have AVX and SSE4.2)
