Specifically, can i watch the chat history with someone who unfriended me and i don't have them on my list anymore?
How can i find the profile of the user who unfriended me but i don't remember their name?
is there any kind of log or history where i can find them?

No, unless you have their Steam id number , you could try use this otherwise no. All chat history is wiped.

If it was an accident, and they care, they'll re-add you. If not, move on. Multiple people have said this being belligerent and argumentative doesn't make for a compelling argument. Also good luck trying to dictate who posts and what on a forum you don't own...
