I signed up using Google, it put my first/last name as what it is for my Google account, which isn't my real name. I did not give Epic my address at all, nor does Paypal share my address with Epic.
As for payment method, it only saves payment method if you choose to save it, which I do not have it save it.
Epic does not have my real name and address at all, nor have my payment method.
Bro, are you special? The address is not shared to the company you're purchasing it from. The only reason billing address is required, is to verify with the card to see if you're doing fraud or if it's really you.
Of course paypal doesn't give Epic your address, Epic doesn't need it.
Steam doesn't need it either if you use paypal, but if you use a debit or credit card, they ask for it for the same reason paypal does.

You missed SETUP an ACCOUNT which is not the same as signing with Google.
If you sign up via Epic the information is stored and required.
If you use Google it has all the information for signing on. Google is a tool.
If you use Paypal for payment it has all the information, name, address, bank account details etc. for easier verification and payment. Paypal is a tool.
At no point was sharing information mentioned nor is required when using Paypal on sites which allow you to do so.
If you use another payment method because Paypal is not an option then you have to provide name and address to verify the payment method.
Steam asks for address if you are using Wallet funds, you know the money that Valve already has? They also ask for full address for other kinds of payment methods that are not credit/debit card and where no address is shared with the payment processor either, on Epic they only ask for postal code if you are using one of the other exotic payment methods.
Valve does not need to ask for full address for tax purposes, postal code is good enough.
If you sign up with Epic with email, then just name and email is required, no address.
If you use a non credit/debit card payment method, that isn't paypal, even exotic ones where no address information is given to the payment processor, Epic still only asks for postal code.
On Steam, even if you bought a gift card from a local store and put that gift card on your Steam wallet, Valve still asks for full address in order to use those funds, and they don't need to, they can simply ask for postal code for tax purposes.

Your postal code is linked to an address and house number, which in turn links your bank account, payment method etc. Have you tried to open a bank account or apply for a credit card without providing all the information.
Every online retailer including Steam pays VAT to the correct Tax Authority due to the law and you cannot buy an item without providing information for verification of the details in other words by proving it it is you doing the purchase.
Postal code does not have your address/house number on it.
I used to live in Denver Co, with the postal code of 80238. Thousand upon thousands of people in that area have that zip code, you cant find me just using that zip code.
Applying for credit/bank account is not relevant here.
Valve doesn't need full address to determine VAT, they can, again, just ask for postal code. For example, if someone is in Germany they can just simply provide the postal code, which is between 10115 and 14199, no need for full address.
On my VUDU account, I only ever use Vudo gift cards, guess what? Vudu does not have my full address, only my zip code, they have never asked me for my full address to use a gift card, yet Steam asks for full address to use a gift card.
Valve is going above what is needed, they do not need to ask for full address for tax purposes, a postal code is sufficient for tax purposes.
You must be doing some highly illegal things if you're scared to hand out billing information.
Its more about the less place your information is at, the less likely it will get leaked due to a hack.
Neither could the postman delivering your mail, nor Amazon without a name and address.
Amazon requires your address for physical and digital. If you only order Kindle books they still need it. Why? because your payment method is linked to your name and address, which in turn is relevant as to why your bank also needs those details to create an account and allow you do do transactions physical and digital.
All online retailers require verification of the payment method via name and address linked to those payment methods. All online retailers pay VAT where appropriate. Epic, Origin, Battlenet, Rockstar, GOG, Amazon, even keysites such as CDkeys, pay VAT and pass it on to the relevant Tax Authority.
Then you need to worry about ALL places on the net you have given YOUR information rather than Steam alone. The most important one been your bank where your money is stored.
