I actually own Windows 8.1. It's not as bad as people think it is. However it doesn't hold a candle to Windows 7 :)
I don't own Windows 10 but my friends do so I have a lot of "hands on" experience with it. I don't like it at all.
In my opinion its the best Windows by far and never had a single performance or other problem on Windows 10. It actually was more stable then Windows 7/8 for me in these 3 years.

Also, Windows 7/8 spy every bit as much on you as 10, the difference is that 10 TELLS you about it at installation and lets you turn 95% of it off.
For the 5% rest there are 1 click external programs.
But you are free of course to continue using Windows 7, its still a good OS.
Just be aware that all security updates for 7 will cease on January 1th 2020.
So if there will be a security exploit in the future you are pretty ♥♥♥♥♥♥.
Also, more and more games need Direct X12 in the future which only runs on Windows 10 onward.
Until they pry it from my cold, dead hand.
You can have all the security in the world, but you "look" for trouble you will find it even with all the anti virus software you can have. It's not enough to protect you.
It's been like 10 years for me since the last time I had a legit infection on my PC.
I mainly use my PC for gaming, casual web browsing, (sites that I already trust) online shopping/selling things on ebay, and the occational youtube video upload.
I pretty much only install software from trusted sites like Steam and such. So yeah like I said I haven't seen a legit infection in AGES (in my PC's I see them often in other people's PC lol).
Also windows 7 does NOT spy on you on the same level that windows 10 does lmao. Windows 10 is basically legal bloatware and spyware.
So far every single game that I want to play works perfectly on windows 7 so i'm not worried about DX12.
However in the future I would like to use RTX so I know that will be an issue. But as of right now i don't care about RTX it's a "gimmick" for the time being IMO.
(then my new PC will be ready :D)

What specs does your new PC have? I'm guessing they will be night and day compare to that potato (no ill intentions with that comment) you have now.
I recently built a PC for a friend with similar specs to mine but with a 2080 super and only a 1TB Evo 970 plus.
I will replace my 1080ti with the rumored 2080ti super if it's true.
Had to slipstream drivers [MSI Smart tool]
Had the nag screen from microsoft [you can't use this cpu on windows 7] when trying to use windows update.
but found a work around online
I have tried windows 10 on VMware, can't even disable services I don't need.

You have to jump through some hoops to get Windows 7 on modern hardware but very doable :D
I basically did the same as you. I had to slipstream USB3 drivers with a similar tool but from Asus and used a UBS Flash drive for windows 7 installation. Once all the drivers were slipstreamed like USB3 3.1 and NVMe driver the installation went very smoothly.
Then I just downloaded the unofficial patch to allow windows 7 to download windows updates on modern hardware.
Other than that EVERYTHING runs perfectly <3
No reason to stop just yet,.
I miss the retro Steam client but I don't miss Win7/8/10 interface, WinNT on the otherhand...
