If i refund a game that I used a coupon on will I get the coupon back?
I bought Virtual Desktop but it was absolutely useless and I used my $5 winter coupon on it, I was about to refund it but it doesn't mention if I'll get my coupon back or not.

As far as I know, the coupon will not be returned.
I refunded it and I didn't get back the coupon but I got back like almost 5000 coins or whatever so it's fine

I bought 2 games with a combination of steam wallet funds and the coupon. However, I found the next day that Steam had refunded my wallet funds, but I don't have the coupon/all the tokens back (I only have 3000 tokens now.)

I've sent support a message asking why it was refunded, and about recovering the coupon so I could use it again about 2 days ago but they still haven't replied. Has anyone else had this issue?

Yes. Users' token counts have been adjusted over the past few days. You can see an audit, if you're curious.

You probably spent tokens that were erroneously credited to your account.

I received a response within 24 hours a few days ago...an actual issue, non-refund related.

Don't assume and trash just for the sake of trashing.

Yeah I guess. Just that it's kind of a meme about Steam Support, lol. Or at least it was; maybe they've gotten better.
