You seem to have missed the point where the OP only has 30 bucks to spend.
So Monster Hunter World is not a option.
https://store.steampowered.com/app/275670/Space_Run/
and it's sequel which is much more "grind" to unlock new ships, weapons, upgrades etc.

It's kind of a tower defence game but not at the same time. Eitherway, if you use "other" sites you can pick them both up for just a few $$ each leaving you free to choose even more games.

Destiny 2 is $69
Seconded. They do the microtransaction thing right, meaning there is absolutely no pay to win dynamic there.
If I were to spend $30 on PoE, what would be the best thing to spend it on?
Stash tabs.
POE is awesome and definitely worth it as well as grim dawn. Grim Dawn you can play solo without being hooked to the internet. POE is great with other ppl to help with achievements.
POE is like Diablo with the ladder resets and everything going to normal. each reset brings new mechanics to the game and it keeps it fresh.
im trying out titan quest now. heard good things about it and hope to do some loot hunting like old d2. maybe you can give that a try as well.
If you had $30 extra, then i'd say Monster Hunter World.
It's grinding, without the 'grind' (if that makes sense).
More or less because you're always moving/making progression and the systems within the game can be deep, yet simple to understand once you start scratching the surface.
I can't recommend it enough. Just know that it's going to take a couple hours before the game actually 'clicks'. Largely because of the somewhat overwhleming amount of systems in place and staggering amount of things you can juggle while playing.
Dark Souls 2: SOTFS if you dig those games, has a great New Game Plus (best in the series) and if you're going for a 100% achivement collection...there is plenty of grinding there too, along with progression, challange and more.
As someone mentioned, Grim Dawn is good too...but there is something about it that doesn't click well with me (where as Diablo 3 did click with me). And there is Titan Quest, a classic that holds up very well and to me, is easily better than Grim Dawn. (Grim Dawn is good, it just feels like it's missing something I can't put my finger on exactly...as all the gains you get, feel so lackluster).
Oh and the Van Helsing trilogy of ARPG games are great too. Hell, you can most likely get a bundle of all three for a good price.
You could always figure out how to emulate Legend Of Zelda: Breath Of The Wild for Wii U.
Plenty to grind there, plenty to explore, experiment and enjoy. It's one hell of a game IMO.
No Mans Sky with it's recent updates is without a doubt worthwhile in checking out. Tons and tons to do there.
For something a little different, Rimworld or Oxygen Not Included have their own 'grind' but offer very unique experiences, but certainly aren't everyones cup of tea.
For me, I can spend endless hours in those games trying to progress, learn, build, etc etc etc.
It's a different kind of 'grind' in a way.
Lastly, theres always the totally free Path Of Exile.
Made by some of the original Diablo 2 team.
Just be prepared to do a lot of research about the game, as while it's easy to pick up and play, you'll really have a more enjoyable experience if you go into the game with a general understanding on how it's mechanics and economy works.
Best part is...it's legit 100% free. The only paid things are cosmetics and a few tiny little inventory upgrades (which are still very optional). It's easily the most fair free to play model ever.
Oh, same goes with Warframe. Falls under the same exact thing I said about Path Of Exile.
