What about the Ace Combat games?
Free to play on Steam with 3 aircraft, additional aircraft available as paid DLC:
https://store.steampowered.com/app/244050/Rise_of_Flight_United/
Or you may be interested in the FOSS FlightGear:
https://www.flightgear.org/download/main-program/
If you are interested in looking at something else old-school and tiny:
http://ysflight.in.coocan.jp/software/e.html
The Windows version still seems available, but the Mac and Linux links are broken.
Since I found no game I'd like, I figured MFS was the best choice (as it had relatively low file size, and seemed better.)
Thank you for these recommendations everyone, much appreciated
Flight sims are super cool even though I've never actually learned to play any of them.
Not sure how serious (a flight sim) your post is (looking for), but...

I just wasn't sure whether Rise of Flight would be right. I do enjoy it but it has none of the modern aircraft complexities. Also, if you do start to get into it, take a quick peek at the game's steam forum or store page reviews. Both provide ideas about the best / cheapest way to go about getting two or three extra planes that can unlock a majority of the non-free content. Or stick to steam DLC for probably the cheapest way to unlock everything (being aware that it may mean waiting for good specials).
Unfortunately the 2 different versions of the DLC cannot be combined on one account.

I really enjoyed the gliders in MS Flight, found it so satisfying to stay aloft for an hour or so catching thermals.
I've spent far more time with powered aircraft in FlightGear.
I still have a bit of a dream of getting 3 really nice PC's and building a front + side view X-Plane cockpit... one day.
