is limited only by your imagination.
e.g.:-

Besiege
Astroneer
Autocraft
Any city builder (Cities in motion, Cities XL, Tropico,Simcity etc)
Infinifactory
Factorio
Kerbal Space Program
Medieval Engineers
Space Engineers
Planet Coaster
Minecraft
Terratech

I can think of many more, but these are just some examples.

There's a lot of truth to TS3 having huge replay value. I was playing heavily for the first 7.5 years of it's existence.
Maybe:
- Stardew Valley (Harvest Moon but better)
- My Time at Portia (see above)
- Dark Souls (1, 2 & 3)
- Any Tropico game (1 to 6)
- Any Sid Meier's Civilization game (3 to 6)
- Any game from Paradox
  • Cities Skylines (great city building game, spiritual succesor to SimCity)
  • Stellaris
  • Europa Universalis IV
  • Crusader Kings II
- They Are Billions (it has a really good Survival mode)
- Rimworld ("similar" to Dwarf Fortress)
- Factorio
- Monster Hunter World

Stardew Valley and Sims 3
https://store.steampowered.com/app/618850/Pumpkin_Days/ This game just dropped onto Steam and is in early access but I would highly recommend it. ^_^ Otherwise I would totally agree with Stardew Valley and Witcher 3.
