Im doing something wrong as i keep getting -5 points when towing vehicles that are parked there it says "taxi only" or when the signs say "No parking - DAY TIME" and the day and time is current in game.

Towing only seems to be justified when they are parked in Bus lanes or in No Parking zones. Everything else seems to be only a ticket.

It seems like what OP is saying by daytime parking is street cleaning signs. Taxi zone or street cleaning justify ticketing and towing but with some exceptions.
Taxi: Normal looking taxi or SH!FT sticker. You can check the car's license plate and it should say "Taxi." If it has a taxi plate, it's permitted.
Street Cleaning: No parking in the street cleaning zone between the times specified on the sign (either 8-12 or 12-4).

Before you tow you need to issue a ticket otherwise you're 'abusing your power' basically. So make sure to ticket the car first for the illegal parking!
