as for bleach games, there were 25 games, almost all focused on mobile platforms from ds psp and phones because that's what's popular in japan, home consoles aren't. we get pc games because the cost to port is cheap enough that even 100k global sales is worthwhile.
now you want to go bleach v onepiece
bleach is the lowest common denominator, up till ss arc, it was great, but after that the seeds were planted for ♥♥♥♥♥♥♥♥ power scale, more or less every single problem that every single shonen that takes a fairly heavy inspiration from dragon ball has.
One piece on the other hand, has a fairly good balance of adventure and action and knows where to play it, sure it's a little formulaic in the way action is done, as in luffy will never hard loose, but it doesn't play up 'oh god it's all ending, worlds over' the way so many others do, artwise... it's one of the most distinctive art styles ever made, you want to have something generic, look at shoujo manga and shows, they are almost interchangeable, you want to see characters blend into each other, look at case closed/detective conan, that thing is, while distinctive enough I know it when I see it, inside its own universe it's so generic major recurring characters blend into each other so much that it's hard to tell who the hell someone is at a glance. hell one piece is going to break 1000 chapters this year, and every single character is so distinctive that when they show up 100-200 chapters later in a 1 page cameo I still know who they are, that is a feat in and of itself.
one piece isn't popular due to pirates, its popular because its an adventure book first, with a good mix of slice of life and action
one piece has, at least to my understanding everything mapped out, but the little bits on how you go from a to b to c is still up in the air allowing for changes in how things progress if necessary.
I'm not current with one piece, I read up to the toy people arc (not sure the arc name) and sure, some arcs, like the sky island that didn't draw me in at all felt like they drag on forever, but its not the kind of dragging that happens with out of control power scale.
One of the things about one piece was fairly 'early' on in the story they made a point that bounty means nothing, sure, its an 'exciting' metric to track, but a skill could hard counter you
bleach, and dragonball, the first section (through soul society, and pre saiyans) was a very different story, and bleach pre ss was very different then once they got there. there is a big difference between im on a mission and here's the setting, and the straw hats landing on a haunted 'island' and taking in the sights about 1/3 to 1/2 of the time.
before ss, you were finding monsters and the like, and staying fairly grounded in a real setting, post this they went places with a mission in mind, there was no real taking in the sights, and every moment of the story was either dealing with a bad guy or getting stronger to beat a bad guy, the formulaic nature and the authors real lack of ♥♥♥♥♥ to give when it comes to environments really started to show after ss arc.
dragon ball went from an adventure to find the balls, to a decent training arc, to more adventure, to another training, then setting for fights, mild adventure, training, setting for fights, and after the timeskip basically only training and setting for fights with no real sense of adventure to be had.
One piece still retains that, and I think this is why so many people latch onto it, on top of the slice of life chapters where its nothing but characters interacting and you get a good sense that yea they are all friends and not just battle buddies, this is something that onepiece has FAR above everyone else and the only time it ever gets touched is the initial idea phase for new manga.
If you want a recommendation, KOMI Naoshi's works are great, at least everything that wasn't Nisekoi was good. double arts probably could have been the next one piece, or at least had a place among the big ones, I have no idea why it was canceled, but beyond that you have his one shots, island, williams, personaunt, and a love story one shot that I argue is a better premise then the one he got picked up for.
tl;dr bleach did one thing right, it had great design in the early phase and then it went to ♥♥♥♥ over time
one piece has an off putting artstyle till you get into it, and every 50-100 chapters its putting you in a new place to explore, where it keeps its adventure tone throughout.
One punch man, this relies entirely on not focusing on the main character, and its great, hell, look up the webcomic if you want to see why its popular, its not the art, its the way the story is presented and told that make it popular.
as for this game... kind of seems like a tag team cash in style, I doubt its going to have staying power

also one piece games are popular because it's one piece, not "pirates".
Both are terrible.
bleach would lend itself well to a straight up fighting game, possibly a monster hunter style game
while one piece lends itself very well to the dynasty warriors style setup, this allows it to have a fairly mass casual appeal while being a story type that tends to do better in the west then just a romance of the three kingdoms style games if only due to burnout on the romance based ones.
bleaches time for headlining a game has come and gone, and while it is big, its not dragon ball big where even in downtimes it will still get games, so the best you can hope for is cameo appearances in other games, which it will likely do for any game that they want to have many jump characters and have a western appeal.

That's depressing...and is sadly true for a lot of "dead" franchises.
Bleach, Toriko, Medaka Box, Shaman King...none of them are popular enough to get their own game nowadays. The best we can hope for is representation in a crossover game like Jump Force. Unfortunately, crossover games tend to give preferential treatment to more popular shows (which is understandable, because they're the ones that most people play crossover games for).
