Gameplay wise, outside of that 1 mission and the initial introductions with "important" characters in the common room, there was basically no difference for me. And a bit sad how little choices actually matter (except Sebastians quest chain). Like sure they comment on some things you did in some quests like, breaking into a cellar or burning a painting but outside that 1 random npc mentioning it, I didn't feel like I was "good" or "evil" in the playthroughs. Everyone still treated you the same, talked to you the same way.
But I mean, I have 200+ hours in the game so I'm still loving it, so aside from those minor things I think it's a great game overall.
As for the experience, it has been fun, especially because it feels like a unique journey given the little variables. I hope that Hogwarts Legacy 2 goes even further by adding in more consequences for your words/actions for a more unique experience and enhanced replay value.
After trying all the houses with a manual choice later, I prefer Slytherin's dorm—not a dungeon as portrayed in the movies, spacious, subdued lighting, rather elegant, perfect for studying, and with a toast-loving kraken dorm pet. (I've seen two kinds of appearances for the kraken from the dorm.) Has a silly method of keeping boys out of the girls' rooms that is just a bonus for me.
The fact that Slytherin is experiencing a period of tolerance (however canonically brief) is probably the main reason I didn't immediately switch. I'm guessing that Portkey or WB didn't want to dissuade people from a House full of mean people (or encourage them towards such a place, either). I'm thinking it's WB's choosing since the quiz seems to have the same lack of accusatory stances of the Hogwarts Houses as HL despite the books' take on them.
The Ilvermorny quiz put me in a very different US House: Wampus. It's weird, though. Shouldn't at least a few people be getting the option for more than one House with that quiz? I've never read/heard of anyone getting a choice between two or more. (All four is probably right out given the exclusivity of its occurrence, but while rare, more than one should be reasonably possible in enough people to see it.)

There are oodles Patronus animals. I doubt that they'd have the stamina to put all of them into the game.
Mine is a beagle on the site, but it's not even in the top 20 that people get. So, there is definitely more than 20.
The list would probably have to be reduced somewhat, yes. But I did enjoy finding out on the website. A little bit younger and a Harry Potter fan I would probably have loved this.
Mine was the white swan. I believe that's in the top 20.
It's also four options for the house. So, that isn't even a problem.
Animals are a different matter with the animation and shapes alone being quite a bit of work. Nobody would want to see their patronus be excluded for technical reasons. I feel confident that WB/Portkey/whoever felt the same way and declared that it would be all Patronususeses or omit the Patronus Charm altogether.
Maybe the next developers can request use of the Wizarding World/HarryPotter data next time as a shortcut to replicate all possible Patronuses. I don't know the format used by the website. There might've been too much translation involved to make it work correctly in UE4.
