How evil is Prof. Garlic?

Have you ever listened to Prof. Garlics story how she became a Hogwarts teacher and read a little bit between the lines?

She graduated and wanted nothing more than teaching in Hogwarts but Hogwarts already had a herbology teacher by then. Then this teacher *unfortunately* suffered from an accident - a magic beast hiding in a plant bit him - so that she could step in as a replacement. When the poor guy had recovered, he wanted to return, so *unfortunately* he suffered from several more accidents and is now on leave until further notice.

Somehow I have the feeling that Ms. Garlic is not as innocent as she looks...
