Are there at least 2 phoenixes?

There are more graphorns, but only one phoenix.

There is only one phoenix in the game. Graphorns are technically unlimited and they can be bred - after getting your first one, you'll find a lair in the same area where one graphorn spawns at a time. You'll have to defeat it in the same way as you did with the first one, but then you can "rescue" it. If you want to breed graphorns, you'll have to repeat that process until you've got at least one of each gender.

If you want, you can mod the game to have multiple phoenixes. Just back up your save, just in case. I always back up mine for each and every mod I touch. You never know what's going to happen lol.
