The fact that you can't change your wand, is probably intentional. In the world of Harry Potter, a wand is its own entity, it has a personality and enters into a bond with its wielder. Wands aren't just tools that people would switch because they like another look better. While it's possible that a wand and its wielder grow apart to the point where a wand switch might be advised, this step generally isn't taken unless there were serious problems. It certainly wouldn't be taken for a 5th-year student who achieves astonishingly good results with the wand they already have.
In terms of gameplay though, all wands in Hogwarts Legacy behave the same, so it doesn't really matter which one you have.
The shop also plays a role in a quest or two.
