are you serious? your gear shows only flying mounts. How can u ride the graphorn?

When you're in an open area, open your tool wheel... should be listed on the right, beside your flying mount and broom - if you completed the entire questline.

I did not release the beast to the Vivarium yet. Could it be the reason?

Try that, and see if it works. The vivarium is the 'home' for all mounts, including Highwing.

It might. Not 100%. Could be considered a part of it. Was the 1st thing I did after the quest, when I received them...
