Yellow incoming spells and anything else you can protego or do whatever. If you hit with basic attack a shield, at the third hit you get it reflected back at ya, which you can protego, useful if you want to force a protego.
When attacking, you use red spells against red shields, purple against purple shields, yellow against yellow shields. Green (unforgivable) spells work against all shields.
Mid cast enemy spells you can actually cancel with certain spells, that goes for any spell. Trolls overhead attack (yellow) you can for example flipendo back to it's face, or it's ranged rock throws when you protego it you can throw back the rock. Against those swamp lizards, when they're about to spit attack, you can use the yellow levitate spell to catch it's tongue holding it in air with that, and you can combo it with a specific red spell that cuts through it. And so on.
