I had trouble with this on one of the advanced sequences. You just have to slow yourself down. There should be plenty of time to finish while it is in the air. I guarantee I was only tapping 3 times, and it was still doing 4 and missing. Slowing down the shots a little enabled me to get past it.
Also, if you aren't familiar with battles (and eventually you will easily solo against half a dozen or more) the trick is to dodge or protego as soon as you see that you are being targeted. Do not wait to finish your attack sequence. It is better to get 1-2 shots in and not get hit... play the attrition game, and use your big spells when they cool down, making sure that you are using the right one to break the opponent's shield. Have one spell of each type loaded into your panel, with your favorite, or maybe levitation, in the 4th slot (which can also be used to break the yellow shield).
Make and take lots of wiggenweld potions, along with a few endurus potions, and you will easily win every challenge. Time does not elapse when you are swapping potions, so you can do both. For that matter, a maxima potion will help to finish things quickly too. You do not have to finish the quest at low level... you can actually give yourself time to get better in real combat, level up, learn the muscle memory, and then the duel competition will seem like child's play.
