What I'd like to know is how the Hell I'm supposed to "Steal a ranger's crossbow bolt."
Expelliarmus makes them drop the crossbow, but there's no way to target or pick it up.
just as they're about to fire, you get an option to grab the bolt like you would any barrel or other item and throw it with ancient magic

Edit: Hit Q for shield, than ancient throw (My dumbass was trying to reflect it back at him lol)
Basically you just dodge instead of block when they do the overhead swing and then use Flipendo
In the quest "Plight of the house elf", there's a troll you can practice on. He's in a sort-of arena with an exit that you can use as your escape. After going through the door, you'll be out of the troll's reach, as he's too big to enter the passage. But you can still attack him and cast spells on him, you just have to re-open the door whenever it closes itself.
