It seems there was much more to do planned for the whole animal keeper side of the game that got cut.
The scope of this game got trimmed WAY back from the initial concept.
Data mining shows that animals are have "year caught" in their internal data. There is also an option that allows animals to grow up which has been switched off in the background. There are also hidden options to choose bloodline which are unused by the game. And so, so, so much more.
