How "rare" a shiny is I dont know. Got a shiny kneazle on my first den hunt and a shiny niffler on my 2nd den
OP was asking if it has any use beyond comestics.
Like if it contributed to your field guide entry to capture both variants, or its just there for eye candy.
There just there to hunt for if you want and to look differnt, just like in pokemon
Seems that there is a ton of features cut back. People who have gone through data mining the game have come up with a bunch of stuff that suggests the whole animal rescuing and raising was supposed to be much more interesting than what we got.
There is even a small line of code existing in the game right now, that will allow beasts to actually grow up. It just has to be switched on. There is also a database for each beast that tracks what year it was initially captured. This suggests that the player character was meant to go through several years as a student of Hogwarts at one point in development.
They do not worth more gold, do not give more matrerials. They just look different.

They have confirmed that there are no plans for DLC, so don't go holding your breath!
That said, given how well it is selling, they may very well be tempted to dip into it. That assumes that the team worming on the game havnt already been re-assigned to something else or simply let go, as they seem to do in the industry.
THEN you worry about DLC.
True enough, although typically a DLC road map would be drawn up internally at least. Who knows, they might just be playing it cool or something.
