Otherwise, there are a ton of side missions, which update with each act, so keep an eye out for those.

You can only find them by looking at the map, or coming across them while exploring.
These tend to be season-dependent, so if you end the season without doing them, they are lost.
They aren't actually lost. After finishing the main story, any that you missed during the seasons will all be on the map to complete.
The one thing that can be missed are the curses. At one point, you have an option to turn Sebastian in. If you do that before you go back to the Undercroft and have him teach you the curses, then you cannot learn them.
