Finishing Touches?

Haven't been able to find anything regarding which enemies I've actually struck with ancient magic. Is there any way to tell?

Normally they're lying prone on the ground.

Not what I meant. The achievement Finishing Touches makes you hit every enemy in the game with ancient magic. Having used it plenty during my playthrough I have no idea which enemies I'm still missing. Don't really feel like starting over just to hit every enemy with ancient magic. It'd be kinda dumb if there wasn't a way to track progress....

In my case it was the River Troll.

No idea if there's a way to track it but I'd probably start with all the enemies that are often just in the middle of the forest with nothing to throw. Stuff like Mongrels, certain types of spiders, Dugbogs or whatever their name is.

There is no way to track it. You have to go systematically through every enemy type unfortunately. For me, the one I was missing ended up being a spider type

I got it by trying keep at least one bar full at all times and use ancient magic when I thought I was fighting a new enemy. Another possible trick is get all the upgrades for the meter, fill it up and then go to the dens and such to kill respawns and slowly 'check off the list' until it drops.
