The races I didn't care for. But just flying around was fun. Sometimes I would jump off buildings and before I hit the ground I put out my broom to sweep the floor as I fly away.

Why don't you turn with your mouse? I do, must be in settings. The only thing I changed was mb4 for down, as cntrl is awkward.

Kb/mouse or controller?

I use controller and there's a mod that moves all controls to the left stick (right stick just turns camera left and right)

It's loads better.

Definitely made for controller and not k/m. That being said even on controller it irks me that there's no kind of chase cam. Constantly adjusting your camera as you turn is an annoyance when trying to set your best times.

Mouse doesn't turn for me. Well, it doesn't, but it's a very slow turn. If you want a fast turn you have to use A or D which is awkward.

There is one for controller that moves the up/down to the left stick

The flying is something you need to get use to if you're using a controller. Once you've mastered it, it's a lot of fun.

It's smooth and easy to do.

I use the mouse as well as the WASD keys to move, Space Bar to fly upward (thumb), Shift key for speed toggle (pinkie) and left CTRL button to fly downward (pinkie finger).

You just want to tap the A and D keys to turn, then fine move with light movement of the mouse. Line up to things before getting there and avoid making too sharp of a turn.

The difference between the brooms I believe is purely cosmetic, but you can still upgrade the broom handling and performance by doing the flight school training.
