Breeding Unicorns.

I've only ever seen females. Are there any male Unicorns? I'd like to breed them.

I'm starting to think this is time/day related though could be entirely coincidental.

It seemed when I was catching them that there'd be periods where no matter how many times i went and captured them it'd always be a female to appear, then I went the next day and it was all males

Do you know if we can use Unicorns as mounts because I thought I read somewhere we can as ground only mount?

No, the ground-only mount is the Graphorn. You get one by progressing through the main quest. It's unmissable.

Theres a Unicorn capture quest in Hogsmead. Not sure about the gender i think it maybe male. The only animal i can't breed are Phoenix rn.

Catch 1 from the den and wait about 1-2 mins and check again if it's different gender

You get a mission to rescue a unicorn, I rescued that one and another at the same time, got a male and female.
But haven't needed to breed them, iirc unicorn horn is only used to upgrade 3 pieces of equipment to level 3

Yeah. When I did that it was 2 females.
I breed the Animals to make some quick money from selling them.

If you're breeding them to sell then I advise foregoing this and just catching and selling puffskeins. Same price, but you'll find dens of MANY puffskeins and be able to afford all your purchases in no time.

You can breed unicorns, I've done it myself. You need to revisit unicorn dens frequently until you find a male. There's one just west of Upper Hogsfield that you can visit over and over again. Remember that only one unicorn will spawn per visit so you may need to fast travel over and over to get it. I did it by visiting in between side quests and main quests.

I captured a male Unicorn last night. By accident.

I wasn't looking for a he/she specifically. I knew nothing about the breeding part of the game, until you mentioned it.

He was in the forest by the spiders, at night.

Yeah when you start getting beasts Deek tells you that you can breed them in the Breeding pen inside the Vivarium. But you need to buy the Spellcrady to make the pen.
