The tip for those statues, IIRC, is to use expelliramus on them as they are weakened without their weapon. Also, remember to use Ancient Magic (tm) (Z and X) on them as they are particularily vulnerable to that.

I'd rather dodge than block, personally. I'd also use a Thunderbrew potion for the lightning storm damage, because you can keep dodging and the storm follows you around

Here's what I did playing on Hard. Managed to finish the fight without taking damage.
But basically combos are important to kill things fast. Expelliarmus + Diffindo = big damage to these guys. The smaller ones are vulnerable to most CC as well so just try to keep as many as possible unable to attack.
