Literally sounds like a skill issue on OPs part.
In those, the best training for fighting is to just stand there and practice counters and dodges. It also takes a bit of getting used to, but you don't watch the enemies, you just watch your character. When there is a yellow warning over your head, you need to block (counter in the Arkham games) or dodge. When the warning is red, it is unblockable and you have to dodge.
So don't even worry about attacking at first. Just stand there and wait to block or dodge when the prompts show on your character's head. Once you've got a feel for that, remember that that is your primary fighting stance: defensive. You will realize that you cannot even be hurt if you simply prioritize blocking and dodging. Then, start adding in some attacks in between your blocking and dodging. The timing of most attacks will come pretty regularly and you'll get a feel for the short window you have to attack before the next incoming attack comes your way.
As for Protego, I believe you do want to hit the button whenever you see the prompt show up on your character. (I'm a PS5 player, so not sure what the configuration is like on PC.) And you want to hold it in order to trigger the Stupefy that will auto-cast after a successful Protego. That can be super helpful during a battle, too.
All that being said, there were definitely times where I burned through a lot of potions, too, and felt like I couldn't keep from getting whacked when there were a lot of mobs at once in a confined area. Still love the combat, though.
Try this cast order:
1. Levioso (get the talent upgrade)
2. Descendo (get the talent upgrade)
3. Confringo (get the talent upgrade)
4. What ever you like.
Also dont forget to take advantage of Stupefy when casting Protego. It makes your wand attacks do much higher dmg.
Here is a song for you :D :

there is a clear indicator over your head, when it you see it glow orange... hit protego. ezpz
If it's red, you can't deflect it, so dodge. Also, cabbages destroy everything. You can also make potions which give you invulnerability (if you have the talent upgrade)
The thing is, I tried both and the controller's layout need time to get used to.
And on PC, you need to change controls, as blocking, throwing, dodging, switching spells, healing is way too much to handle for one hand.
I changed my right mouse click to cast protego, middle click dodge.
That way I take to task off my left hand.
