"Your best bet might be to restart the game and reload from the last checkpoint. This will refresh all environmental instances."

The "last checkpoint" is what caught my eye, since they're saying it will reset the environment. I don't have the game so I'm not sure if that is a box you have to tick when loading a save or not. If not I guess the only options are learn how to setup the mods, or go start a different character build while you wait for a bug fix.
go here: Drive C > users >the folder with the name not the public folder > appdata.
appdata may be hidden folder unhide your folders just to be sure.. once in app data you should see
Local
LocalLow
Roaming
Check in these folders for hogwarts legacy mine was in the Local folder
Click "saved" then "savegames" "then click the numbers"
You should now see your autosaves.
only delete the most recent ones do not delete all of them.
Ive not actually tested this myself but as your saves broken you could try it
