The visual cues for dodging/blocking also seem to be shorter.
As for combat i find it grandioso easy even on hard... so it's safe to say you're good to go with "Hard" difficulty as i'm sure you'll find it what other games consider "easy-normal" difficulty lol
Hard just means enemies has higher stats, it doesn't always mean they have more hp, the enemy just get higher 'defense' and 'offense' stats.
Easy gives you parry indicator and slow down enemy attack a bit.
