Can't fly ?

Took the flying class but still can't fly is this normal or will I fly later in game ?

At the end of the quest, the kid you are flying around with mentions a shop in hogsmead to buy your own broom. Once you buy that you will be able to fly around whenever you want to.

Pretty much right after that quest, you get a sidequest to go to hogsmeade and buy your own broom

I was also wondering where my horse birb was for a while.
How quickly you get it depends on how quickly you rush through the story.
You can rush through it, get the mount and then slow down; or you can do what I did and play for about 21 hours before getting the mount. xD

i'm not in a rush to be honest, around 30 hours in, just looking around and having fun

Im doing my 2nd playthrough ........ you need to hold the potion wheel button and click broom on the right ........... been needing this and couldn't find it either. somehow found it on the initial playthrough
