So, by turning off the minimap, I find I am paying much more attention to the world in front of me, to learn where to go, and what leads where.
and how does it feel? are u recommended it? if it's playable? I heard that the problem is not finding side quest. Did u turn off the Hud tracking icons also?.
im just planning start to play now first time, and i want more immersive gameplay, but with out of issues

There is probably other things I can turn off too to make the hud less cluttered, but those are the things I am not missing at least. I'd love an auto fade for health, spell icon and so on, but since you only have the option of keeping it visible or not seeing it at all, it's hard to know what settings would interfere too much.
I did turn it off, along with some other HUD items It makes it a bit more interesting. Feels odd at first, but then you start to get used to it. Early on you dont have the guide spell, but you can figure things out with using the map in the book.
As for finding side quests, you can see them in the map, and set your waypoint to it to help head there.
I found a mod that allows you to (manually) enable and disable specific UI elements on-the-fly via keyboard shortcuts, so you could turn it off as soon as you're out of combat. https://www.nexusmods.com/hogwartslegacy/mods/1293 . Not exactly what you wanted but it's a viable alternative.
