I created the character with the wrong gender

There is no option for gender during character creation, everyone in game is non binary.

Of course they do, it was even pretty early in the game, I think when they introduce you as the new student, they used male pronoun. At least in my German version of the game.

During character creation you can choose between wizard (male) and witch (female).

No, read the description in the character creator. It says it isn't a gender selection but a dormitory selection. You can make a man and have them be in the Witches dorm and vice versa.
