In game, you just pick.
I find it lazy and obnoxious. Sorting is important in the books with it being something that happens in most of them. It's as important as the S on Superman's chest.
There are some who feel even in the books the characters could ultimately decide their house, but I still feel that characters could influence the hat, but really the hat made the decision.
It would have been nice to have an indepth cloudy quiz in game. They could have even tied it to lore situations you find as you progress in the game. Yes, you could look up a guide if you chose to, but I think many players would have enjoyed it the first time to just let the hat pick.
It's lazy and it could have been an easy dunk.
Also, the argument falls apart because there are quizzes for it on Pottermore and other official Harry Potter sites. They just didn't want to implement it.
