"Generations" bridges the gap between Kirk's Era and Picard's.
"First Contact" and "Nemesis" are probably the most relevant to getting into the game and the latter gives you an idea of the state of the Romulan Star Empire before the events of the first JJTrek movie.
With the coming expansion focusing on the Delta Quadrant, it's worth brushing up on the Star Trek: Voyager series(most of it is available for free viewing on Startrek.com). I'd suggest watching the pilot, skip to Season 3 for a bit and then to Season 5 when the Borg starts popping up. Feel free to jump between episodes that catch your interest.
That would go like this:
1. Enterprise Seasons 1-4
2. The Original Series Seasons 1-3
3. Movies 1-6
4. The Next Generation Seasons 1-7*
5. Deep Space Nine Seasons 1-7*
6. Movies 7-9*
7. Star Trek Voyager Seasons 1-7*
8. Star Trek Nemesis (movie 10)
* These overlap with one-another at some point. These shows aired closely together, sometimes back to back and have a shared continuity. Its your call whether you wanna mix them for the right order or watch them seperately. Movies 7-9 also take place between these.

I know this is gonna take a long time, but I believe its the best way to learn about Star Trek. Spoiling yourself and cherry picking the best episodes isn't a good idea in my experience, because major events won't have the impact they are supposed to have, if you know what I mean.
When I introduced a friend of mine to Star Trek, I did more or less what Szeron suggested and that worked at first. But we ended up watching everything again later on, but its not as fun for my friend since they already knew the major events that were gonna happen, which kinda took away the buildup and anticipation. There are some really good episodes you could miss out on, that not everyone might mention as "must sees".
