They are both space MMOs, that's about where the similarities end (overexaggerated for effect).
Subjective Opinion:
Eve is trash because they thought Ayn Randian economics was a good idea and the whole setup feels off stylistically.
The whole thing brings out the worst in people, too.
People swear Eve is fantastic and that it also brings out the best in people - I hated every minute of it when I tried (gave it a fair shake, didn't click at all).
The whole concept is moronic at best, breeding grounds for griefers at worst.
But that's my opinion.
Now, I love Star Trek, and STO is one of my most played games, ever.
Yet people think it is trash, and those people have good reasons (and also silly ones of course).
It's dated. It's wonky in places, and they can't seem to fix them properly, at least not without other parts going ping in a different, unexpected corner.
New gameplay content comes at a crawl of about one episode per year, and the last ones met mixed receptions for reasons I won't get into here, but those people also have points.
But I'm loving (almost) every minute of it and have for years.
Will you think STO is better than Eve?

I love both for what they are, but your question is all about you. How would any of us know what you like?
The only way you are going to know is by playing both and making up your own mind. Since both are free to play you really do not have much to lose by doing so.
They're not the same game. They simply aren't. You might as well ask whether chess or volleyball is the better game. All I can tell you is that one benefits from wearing bikinis and the other very much doesn't.
I have heard that the Dalai Lama plays STO.
Why would i say it's the same game when they are completely different to each other? and how can you compare them to each other and which is better?

eve online : hardcore permaloss game mechanics + open world pvp and player driven market , for more usable ships you need a subscription
STO : casual game without loss but ground combat and completely free , micro transactions in form of races , ships and some outfits + loot crates who are forbidden in some countries
