For the episode play, I like the Jem'Hadar set, you get it for free and it's quite good IMO. You'll obviously need to grind for the whole set, plus a good amount of the Polaron weapons.
I only mention this because it's the only set that I know of that's actually "easy" to get mid-game. It's not totally awesome, but it does the job. You would obviously need to augment your loadout with Polaron buffs etc, and personally, I don't like polaron much, but that's purely me.
Rep sets are more tricky, but again mostly depend on what you like. Apart from Omega (no specific damage type, still good) and Nukara (many people dislike Tetryon), they can all be viable for escorts.
Personally, I always liked the Undine set mainly becuase you have a lot of items on the list and can choose between Disruptor and Phaser in the same rep. That and the added exotic damage from radiation has always been good for me.
Plus the Enhanced Bio Photon packs a mean punch when High Yielded.
But again, it's mainly about preferance, most rep sets do the job if you like the underlying damage type.
Better try to think of a general concept before and then check what set(s) would support this.

2parts omega rep adepted borg (cuttling beam and console) for the 2 set bonus
and 3-4 parts iconian rep space set (shields/engine/warp-sing/deflector) for the 3/4 part bonus
but there are plenty of choices and it depends on what u wanna do with ur ship, u can run 2 parts adapted borg tech space set (useually deflector and engines) if u wanna be more tanky cause it gives a ♥♥♥♥♥♥♥ of hull-regen
or maybe run the terran space set for the shield refill proc for a medicore replacement for the romulan valdor console if ur a fed charackter
alot of people are using a fleet space shield with the *adapt* bonus + a plasma infused fleet warp core/singularity in the beginning since those are pretty cheap and can carry u threw almost every content

And Logical is going with this wierd setup where he has DHCS in front in a quantum torp and two beam arrays in back. I know it's quite an unusual setup, but he seems to be happy with it so I wouldn't bash him for it. Also, he's now flying a Vorgon Escort.
