Without context, I'll offer the top 5 from my stable that I enjoy bringing out the most(for a myriad of reasons):

on the whole, that's kind of inconsequential
- Science ships: Legendary Intrepid, Verne Temporal Science, Risian Weather Control (almost a three-way tie but I'm partial to the Intrepid)
- Tactical ships: Jem'Hadar Vanguard Warship, Jem'Hadar Vanguard Heavy Destroyer, Legendary Defiant, Maquis Raider, Ferengi Nandi (roughly a five-way tie)
- Engineering ships: Legendary Ambassador, Legendary Sovereign, Legendary Excelsior, Ferengi Quark Marauder, Khitomer Alliance Battlecruiser, Arbiter/Kurak Battlecruiser (dep on faction)... etcetera... hard to pick just one
It's considerably more important than ship "class" in terms of... literally everything. Weapon layout and console layout, as well as seating distribution, are very important - they're what determines if the ship is good, bad, worthwhile, a waste, etc. Unless the ship is iconic in some way, its what determines if you'll see anyone piloting one a month or two after it is released.
Escort : JH vang warship or maquis raider (even tho its the ugliest ship in the game)
Cruiser : Section 31 / Vaadwaur Juggs
Sci/Tac hybrid : Fleet Titan or legendary/mirror crossfield.
The two primary requirements for a really good science ship are Molecular Reconstruction (which you set to Support Config for +10 aux power, +20% exotic damage and +40 control expertise) and heavy Temporal seating for additional anomaly nuking. All the ships I mentioned have both the Molec Recon ship feature and at minimum commander temporal seating, and the ability to field both commander and lt. commander seats with science abilities.
Verne edges out the Eternal for top spot as it has excellent maneuverability for a science vessel and both cmdr and ltcmdr temporal seating. Eternal has a significantly slower turn rate and the second temporal seat is of a lower rank and is the sole tactical seat, making you choose between temporal abilities and tactical abilities if you want to use the lt.cmdr universal seat for more science abilities.
Edoulg is ugly, but it has a 4/3 weapon config for more torpedo power as well as a hangar. It only has one temporal seat, but it has a lot more tactical capability in terms of consoles and seating if you want to mix in torpedo-boosting abilities, and it has some intel seating if you're into that.
Grissom and Bastille bring up the rear because they have the 3/3 config, a single temporal seat. Bastille is likely over the Grissom due to having the extra command seating to use for concentrate firepower, but not bound to tactical.. Grissom has only an ensign universal, though a better turn rate.
