Normally, using Drinker of the Dead as a vegan is just prevented with a message like the one you get when eating food as a vampire.
Even apart from that, Vegan actually works <i>better</i> if you're allowed to eat - don't underestimate the tofu/veggie drops. Just grind+lutefisk any "impure" food (unless you want to use it for crusts).
(Vampirism, on the other hand, works pretty well with other regen skills like Armsmaster, Shieldbearer or Communist because Drinker of the Dead scales off health regen, oddly enough.)
@OP: The reason why is because as of recent versions of Dungeons of Dredmor, Drinker of the Dead scales to health regeneration, a stat. Your vegan debuffs were sapping that to the point it rolled back into the negatives. Killer Vegans have slightly higher health regen when not debuffed, so you should actually be healed *more* most of the time. So try to remember not to hurt cute animals or eat non-vegan food when playing a Vegan Vampire, just eat the corpses of the cute animals after they die "accidentally" and you're fine.
Side-note: Killer Vegans extra health regen can't really be described as "slight", they get 5 HP regen. If you're on normal difficulty that's nearly enough to regen 1 per step from the one skill alone.
Personally, I've had very good experiences with each without the other, but have never tried them together. I'm actually more of a fan of Vampirism, simply because I've had lots of fun with it (whereas I have a tendency to make too many mistakes with Veganism, when I 'forget' and become too careless). I think a return to Dredmor might be in order.
