You can combine classes by respeccing to another class while keeping skills you learned from previous one(s) (you learn skills by spending points you accumulate from leveling with that class). However each class has three traits that can't carry over, so you will have to plan out which class you actually want to use in the end after you pick up skills you want from other classes.
It's pretty well balanced, so it might feel a bit easy for experienced roguelike players though, at least until you get to new game plus and then the savage run that comes after that.
Unfortunately, it definitely doesn't meet your complexity sweet spot requirement.

That being said, aside from unfairness I quite like the game and have actually bought all of the DLC's for it. If the game was more balanced and wasn't so reliant on RNG (food, ammo types) it would probably be one of my most favorite roguelikes out there.
So I find it hard to recommend to people. Basically you want a cool, interesting roguelike that you'll probably never win then The Pit is a great choice, if you prefer more balanced roguelikes then stay away though.

For a fast-to-enjoy adventure with some challenge in it I recommend >>Desktop Dungeons<< (Enhanced Edition). It is not a roguelike but more of a puzzlegame with lots roguelike influences, a round usually takes me between 10 minutes and 2 hours at max.
The community is still involved in making some enormous content mod with a priority on difficulty/trickyness, and it already has hundreds of hours of unlockable content (although also randomly generated dungeons) before the mod.
it is a cheap game, and if you first want to try the concept, you can do so for >>0 $$$<<, since the developers always kept the Alpha of the game for downloading on their website (mind you tho, it is more like two different games besides the base mechanics)
