Daggers in the off-hand: Veles only
Bows : Sagittarus only
Staves and Pikes : Triarus only
Shields : Princeps only
From that, you can see that you are pretty much railroaded into using your specific class weapon setup, which is:
Veles : dual wield
Sagittarus : bows
Princeps: weapon & shield
Triarus : 2 handed weapon
A Veles needs to have a dagger in his off-hand for some of his most useful skills like Shiv or Sneak attack, so there's no reason to not do that, considering that you can't equipe a shield or a 2 handed weapon anyway. Regarding the main hand weapon, you have the choice between another dagger for more focus gain or a sword or spear, some of them having combo attacks with a dagger in offhand that are quite good. For the second set, you can get another pair of weapons with different skills or go with only one in order to have access to unarmed skills (especially useful if you go Brawler with Pankration).
A Sagittarus going Hunter can use a melee weapon in his second set for a few levels, but once he gets Barrage, he should definitely get 2 bows and rely on Arrow stab to trigger Versatile frome time to time. If you don't go Hunter, double bows with complementary skills is pretty much always the way to go.
Almost all of Princeps skills require to have a shield, so you should have a weapon & shield setup on your first weapon set and only a shield on your second weapon set, in order to take advantage of the very good unarmed skills of this class. I prefer the swords to the spears for the Princeps because the available skills are much more useful, like Overpower or the one giving you Deflect.
A Triarus will always use a two-handed weapon, because it's better damage and usually more range, but for the second set, you have the choice between either another two-handed weapon (like a staff if you got a pike, in order to have more versatile skills and damage types) or a one-handed weapon only, which gives you access to his unarmed skills. That's the setup I use with Syneros because he has one of the best unarmed skills in the game (Soothe pain), but for a damage-dealing Triarus Destroyer, it makes sense to have a two-handed weapon in each set.
