As far as knocking them out with the beating stick (or saber if you go that route, I won't judge) is that there's sync disks which allow you to up the amount of time that they're knocked out (I think that one caps out at a total of +100% or +150%).
If you don't care about expenses, you could always wait til both are in the bedroom and door wedge all the exits to the bedrooms, but then you'd be missing out on that. Alternatively, see if you can get the work schedules for each one. If they're both employed, you may be able to wait until they're both out of the house. Also, don't underestimate the power of hiding places. I've hid under the desk of the Enforcer's admin and seen an enforcer follow my blood trail under the desk and stare right at me, and not know I was there.
There's a lot more to this game than I managed to find out in my 3.5hours.
I have managed to hide under the bed, wait for one of them to go to sleep, escape and wedge the door but that usually only lasts a short time while they break the door down and alert security.
The bribing to take a look inside is incredible- though as you said removes the stealth genre. Love the idea tho to do it in the suspects apartment. Always chose the neightbors. :D
Sync-disks I have not used yet tho if it applies bonuses like that, then hell yeah.
