You can also sell stuff inside your apartment if you bought one by dropping it on the ground, and selling it under the items tab.
plus with this "simulated life" thing you can do it proper and make sure to break into their apartment while they are at work.
If it's open you can ask the clerk about the opening hours, iirc..
The employee hours at mine are 9:30 - 15:00 Monday - Thursday, 14:00 - 0:30 Friday - Sunday
But when asked what their hours are they say 10:00 - 0:00, every day.
It's possible an NPC might try to take it if they see it, but I've never seen an NPC carrying a diamond
What happens is that an employee won't start to leave for work until their shift starts. They also only move at a walking pace (unless the weather is bad and the don't have an umbrella.) So if their shift starts at 10am and the live on the 16th floor on the far side of the city, they may not arrive at work until 3-4pm.
