However in practice, it actually does save progress for the co-op clients. It does it in a way that isn't complete though. This leads to issues like the one you're having. If you don't have a backup save file, you're out of luck unfortunately.
Only thing I can suggest is to perhaps keep that character for whenever you're joining someone else's game, and make a new character that's strictly single-player only. Obviously not an ideal solution, but the game has so many bugs in co-op including this game-breaking bug.
Thanks for the reply, and unfortunately I figured that would be the case. For now the game is uninstalled, as that save game had over 15 hours of gameplay that I am not looking to replay right now.
