Click on the horse and you'll be taken to its details screen; on the left there is a little blue icon under the chart of its general qualities.
This takes you to a graphic that displays its attributes in greater detail; Juvenile Constitution is shown there.
Constitution is related to a horse's condition.
Condition is displayed as a red vertical bar alongside a green vertical bar in the horse's details screen chart.
As a horse is raced during a season, each run reduces the red vertical bar a little.
The green vertical bar regrows as a horse is rested between runs during a season but the red vertical bar regrows very, very slowly; if the red vertical bar gets too low then this can result in the horse losing performance.
I believe the game uses whichever of the red/green bars is the lowest for calculations.
So, best to run horses with low constitution more sparingly.
A horse with average constitution might be able to handle running every two weeks or a month for a while.
A horse with strong constitution might be able to run every week or two for a while.
A low constitution might mean running every month or two, or even less.
