No.. It would sync your monitor refresh rate to the 60 FPS, so you won't get stuttering.
This is a console port, it's designed to run at the exact same FPS as the Nintendo Switch, which is at 60 FPS. The fact that the standards on developing this game is so strict to run at that rate, means that they need to develop their game in such a way that it will render at a fixed frame rate every time. No more.. No less.
This is like saying, how can I remove the 40 km/h speed limit in my neighbourhood street? I have a Koenigsegg ffs, so I want to be able to drive 442 km/h out my garage all the way through to my workplace.
Just because you have a 144 Hz monitor. Doesn't mean everything needs to match your refresh rate. Sometimes, you have to be accept the fact that things just don't go according to what you expect and want. And you have to be okay with it.
