Early RvB is really rough around the edges and cringe but it does get better, I would recommend just watching seasons 1-5 because it starts to have a real story after that point and I feel the series is best when it's just goofing around.
I feel so old...

While the general consensus seems to be that Season 15 is when it really started to go downhill, personally felt the writing was on the wall with the steadily increasing focus on dramatic action over comedy. And then there was the final nail in the coffin - Zero.
seasons 6-8 they started to focus less on comedy and more on story. Those first few seasons had an ok story but they started taking RvB a little too seriously some of the founders started to leave the company and it really started to slide down from there. if you watch seasons 1-5 you will get most of the popular references, you can continue watching from there at your own discretion.
