How to disable aim assist?
It's annoying and I want it to go away.
Halo CE did not have aim assist, because the hitboxes were too big for it to be needed. It sucked in Halo 2 and every subsequent game.

How am I disable aim assist in Halo now pls?

There is a skull to turn it off.

I sure didn't when I played Halo CE on PC with a PS1 controller, or Halo 1 on Xbox with an Xbox controller, or any of the Borderlands games, or any of the other plethora of console shooters, even ones that had aim assist, snap aim, or auto-aim.

How do I get the skull to turn it off? How do I use the skull to turn it off?

Just check in the skull menu before starting a mission. You can choose wich one you want to enable there (with description of each).

If you really want to, you can bind the appropriate binds of a keyboard to whatever fits the controller, movement will be weird but it works
Halo 1 absolutely did have aim assist on the original console. Your aim sensitivity would lower when pointing at enemies and there was slight correction if you weren't touching the right stick but were moving the left, not to mention the obvious thing you mentioned of "bigger hitboxes" (actually bullet magnetism, but same difference), but aim assist applied far less when using the Sniper Rifle. H2 added stronger head magnetism in addition to making most weapon projectiles near-instant speed, so I can see where the frustration might come from.

But as others have said, there's skulls for that in some of the games. When starting a mission (not from Quickplay or Resume, but from Mission Select) you can choose whatever skulls you want (look for "Eye Patch"). This will make things like red reticle useless (since it simply denotes that aim assist is fully activated, i.e. you will probably hit your target). Aim assist is an intended part of the game's difficulty though, and even if using keyboard/mouse, you'll have some of the features stay on to keep the game from becoming more difficult than intended (I say this despite them not fixing the tickrate issues...) unless you specifically turn on the skull, which I think is only available in 1 and 2.

why are you using a controller for a FPS game on PC? I tried that life for about 4 missions and 1 pvp game and took a look in the mirror and said its time to move on and learn to git gud with a mouse. Its why cross platform is PC heaven lol. I dont think auto aim works for a mouse, least it never worked for mine.

Because Halo is very slow. I played it with KB/M the first time around on PC, and quickly got bored of how slow everything moved, and how easy aiming was.
Using a controller fits for slower, less aim-heavy games. I use controller to play Borderlands as well, and sometimes other games, like Quake, Doom, or Wolfenstein(2006), mostly just for a fun memetastic challenge.

I don't really play games to see a "you're winner" screen. It's either a fun personal challenge to "git gud", by whatever means are the most fun, or something to enjoy or experience at a relaxed pace. Seeing the "you win" and credit roll is just the end; the journey is where the fun happens.
So, just to be clear, there's no way to start a campaign with auto aim disabled throughout? I have to play through the campaign first, and then I can disable auto-aim when replaying single stages at a time? Other than mapping stick to mouse and dealing with bad directional movement?
I don't want to enable SteamInput because it enforces a minimum deadzone even with config-file deadzone removal, on top of not wanting to deal with janky directional movement.

Is there not like... a workshop mod for it or something? I tried searching for it but turned up nada.

Edit: Okay you can just start from the first mission of the game, even if you've never even started the game before it seems like. Actually, Halo 2 with no aim assist has been pretty fun.
