Not EXACTLY. I mean, you can't completely recreate Master Chief, as the MJOLNIR Mark VI doesn't look exactly the same as in Halo 3, but you can get close. Though, I assume the Mark VI armor is gonna be a late unlockable in the pass, as the Golden Visor and Mark VI armor, were only purchasable in a fairly high rank in Reach. So, if you want to do it in your first campaign run, you'd have to hold on with the campaign for some time after the release.

In Halo Reach, however you customize your Spartan (armor pieces, colors, etc.), it'll NEVER be overriden by presets as with other Halo games. You're always playing as your own Spartan.
This will be true for Halo Reach on MCC. Campaign won't override the armor pieces despite Noble Six having a canonical appearance.

More or less. Mark V/ Mark VI helmet, Mark V shoulders, Gold visor, and that's the closest you can get.

fun fact, if you make your spartan female in the online, noble 6 will also be a female in the campaign, with completely voiced female lines ( never knew this on xbox 360 since i never did it ) but saw a youtube vid about it, kinda cool.
