You should try it out some time.
Just finish the game on your current run and then you can always replay the campaign on easy with some silly skulls just for fun and go for collectibles. It's what I'd do. They're all just cutscenes anyway.
Though I do agree it would sometimes be nice to have at least one save slot, even if it's one save per mission on difficulties higher than Easy, sucks to lose progress just because you have to go do something else at some point. Halo could certainly do that, checkpoints essentially work like automatic quick saves as opposed to a soft reset.
