Halo CE was worth the romp but it was Halo 2 and Halo 3 that made me love the series. I literally saw Halo 2 and thought it looked fun enough to get. Looking back, I enjoyed the 3 books around Halo CE more than the game itself.
If it helps, people usually group Halo 2 pretty close to Halo 3 so if you liked Halo 3 then you'll probably like Halo 2. The Forge mode for Halo 2 Anniversary is more powerful than Halo: Reach's so I am looking forward to that.

Halo 2 is the crown jewel
and halo 3 is the gold and the diamonds
-Able to dual wield.
-You can use Energy Sword and Fuel Rod Gun.
-Able to swap the weapon with fellow troopers.
-Don't require a health pack.
-Able to have cute grunt ally(IMPORTANT).
-Don't have The Library level.
There is really no downside over CE.
Also Halo CE was not so easy either. If I have to choose which one is hard, then I will pick Halo CE, though.
Levels are longer, bigger, and there are more enemies to fight.
Halo 2 is scaled back quite a bit in terms of scope. Feels more like a typical console game whereas Halo CE feels more like a PC game... levels are smaller, much faster pacing, not as many enemy encounters.
CE began the franchise. 3 brought in some great new mechanics (Forge the name but GOD that Brute vehicle is awesome to ride) and a solid, bombastic close to an amazing story)
But 2 created that story. It took the plot of CE and built a significant, interesting enough story to carry a whole universe with its own incredible moments and twists. The game introduces a tonne of new characters, new mechanics and new gameplay elements, and overall feels solidly 'complete' and each level always felt different enough and interesting enough to not just run through the same areas (a big criticism of CE). Plus for me, that was really where the music came alive. Metropolis level on sub-legendary difficulty is just something else. Rolling across a destroyed bridge in a "Tank. Beats. EVERYTHING!" to a heavy metal guitar riff and drums is just...
Hell I might just be remembering that one section and it's still justification for 2 carrying the series.
