Yeah, I don't really get the fact that you can pick your preferred species when the only gamemode with elites forces you to play one round as both species.

Preferred species is mostly meant for custom games and forge. The idea of matchmade games is that everyone should be on the same playing field in terms of balance, unless the game mode is specifically designed to be asymmetric in terms of balance. Elites in Reach have slight tweaks that make them have a clear advantage, such as fully regenerating health. There's a bunch of game modes in social matchmaking that have everyone be an elite but it's in the minority to spartan only game modes, and there's no voting system in place so you're truly bound by the rng gods to load you in on one of them.
